ECS Engineering manufacture a range of mechanical dough developers (MDD) with dry weight capacities up to 200kg (440lbs).
The mixing bowl has been developed in consultation with specialist stainless steel manufacturers to minimise the risk of work hardening and cracking. The bowl and drive motor are totally enclosed in the tilting frame for complete wash down and noise reduction.
The mixing impact plate is mounted to a bearing housing specially designed to withstand the highly mobile and rapidly changing forces exerted during the mixing cycle. The drive for the impact plate is provided by a high quality, high efficiency motor controlled by a soft starter (standard) or variable speed drive (option)
The automated process is controlled by an Allen Bradley Compact Logix Processor. The operator interface is a ten inch Allen Bradley Panel View Plus.
Ingredient delivery and batching is provided from the batching top frame. The batching top frame is configured to customer preference with weigh hoppers and flow meters for measured ingredient delivery directly to the mixing bowl via valves mounted on the mixer lid.
Recipe storage and batch control is handled by the Compact Logix Processor. Standard software provides storage for 100 recipes and production scheduling for 100 steps. Each ingredient name is user configurable for clarity.
Ingredients can be programmed to be delivered by either set point or percentage of flour/dry ingredient weight. Mixing can be set to a fixed time, fixed energy input, optimum work calculation or finished dough temperature calculation.
The mixing bowl is placed under vacuum at a point programmed into the recipe.
